SCOTS CARROTS

This is an old recipe that was used to make a little meat go a long way. The only meat needed is a single pound of sausage type meat (lamb or pork, or substitute ground beef).


1 lb young carrots (boiled); 2 lbs cooked mashed potato; 1 lb meat; 1 egg, lightly beaten; salt; 4 oz bread crumbs; butter or cooking oil.

Drain the carrots and pat dry. Mix the sausage meat and the potato thoroughly together and season to taste, then wrap the mixture around each carrot. Drip in the egg, coat with breadcrumbs, and fry in the butter or oil until golden brown. Serve very hot.
